Is it possible that all particles are composed of smaller particles, and so on down infinitely? Or does anyone know a sound proof of a smallest wave or particle like the "atomos" Democritus postulated?
(I'll ignore the qestion of whether field effects would be composed of these smallest objects, or separate.)

Unfolded properly, spacetime could be a particle field, of which "strings" are the smallest units.

Philosophically speaking, we only know what we observe, and even then there may be uncertainty. What we reason from observations is more or less questionable. We can be certain the sun will rise tomorrow, but anything extrapolated to infinity is by definition unobservable and therefore unknown.
